ORANGE PULP MUFFINS
DISCLAIMER: With any digestive issue, everyone has different results with eating different foods. Our daughter who has IBS has been told to stay away from anything “not fresh”. This means anything in a box, can, jar or plastic (anything pre-packaged)! So I am trying to get more “from scratch” items in her diet. I also have to watch her sugar intake as she also suffers from Insulin Resistance so I often modify my recipes to accommodate her needs.
As a mother, I am always trying to find new ways to get my children to eat relatively healthy and good food. Since my daughters are sometimes picky eaters, have food allergies and special dietary needs that is not always an easy task! Seriously, sometimes I feel like throwing away all my pots, pans and mixing spoons! But then another recipe pops up in my email or an ad and I think….”come on girl, you can do this! You are the BOSS of your kitchen!” I take the wooden spoon in hand and whip out my mixing bowls and with shear grit and determination….make something healthy that my kids probably won’t like!!!
The good news is, this recipe is not one of them…literally, because I have not tried it yet! But never mind that, because today is the day! I will create these lovely and delicious Orange Pulp Muffins and I will succeed!

(NOTE FOR IBS SUFFERERS: IBS affects everyone differently. Some people cannot handle oranges, orange juice or orange pulp. My daughter can, in limited amounts. Please take you own situation with IBS in to account before trying this recipe.)
Ingredients: (makes 24 muffins)
* 3 cups orange pulp
* 5 Tbsp sugar
* 60 gms Butter
* 2 eggs
* 2 cups Self raising flour (I use a combinatin wheat free flour)
* 1 litre Milk
1. Preheat oven to 150 degrees. Cream butter and sugar together until light yellow. Add eggs one at a time.
2. Add orange pulp without the seeds. Add SR Flour stirring in.
3. Add milk and mix to a smooth thick consistency.
4. Pour into sprayed muffin tins and bake for 20 mins or until golden brown.
5. Take out and cool
